Cobbler always reminds me of home–that’s Texas for me. It reminds me of crisp Fall days, my mom, and that one camping trip I was forced to go on….
A year earlier, I had lost my father. At 10 years-old, this created major separation anxiety for me when it came to a supposedly “fun” camping trip. I was sure if I left my mom, she too would leave me forever.
Guess who didn’t care about my crazy paranoia? My school. I was forced to go on the week-long camping trip. My mom promised me she’d be okay. “If you ever get lonely,” she said, “Just look up at the moon. I’ll look up too when I miss you.” At least this way, we’d be connected in some way.
Once on the trip, I didn’t think my anxiety could get any worse. That was until my Spanish teacher gathered us around and told us the plot of the latest hit horror movie– The Blair Witch Project.
Well, that about did me in. I was sure I’d be slaughtered in my sleep. That night, as we all sat around the campfire, my only comfort was my blue tin bowl filled with piping hot cobbler.
I sat there, knees to my chest, taking small bites of the heart-warming mixed berry cobbler, the perfect crumble on top. Just as I was finishing, dreading the last bite of comfort, I looked up at the moon. A warm rush came over me. I was sure my mom was looking at it too.
Maybe I wouldn’t be slaughtered in my sleep after all….
Now, on to this wonderfully easy Slow Cooker Mixed Berry Cobbler. Let me tell you, it simply does not get any easier than this. Perfect for summer BBQs or crisp Fall nights, this dessert will become your favorite go-to.
Easy Slow Cooker Mixed Berry Cobbler
The easiest dessert recipe you'll ever find uses raspberries, blackberries and a box of white cake mix.
- 2 cups raspberries
- 2 cups blackberries
- 1 tbs lemon zest
- 1 tbs corn starch
- 1 package white cake mix
- 7 tbs butter cut into 7 cubes
Wash all the berries and add to the slow cooker.
Add in the lemon zest.
Add in the corn starch.
Mix to combine.
Pour the white cake mix on top of the berries. Spread evenly across the top.
On top of the cake mixture, top with the cubes of butter evenly spaced.
Cook on high for 2.5 - 3 hours.
Serve with vanilla ice cream.
