Chorizo and Tater Tot Freezer Breakfast Burritos

Packed with chorizo, scrambled egg, tater tots, and cheese, these freezer breakfast burritos will last in your freezer for 3 months.

Ingredients

  • 1 package tater tots
  • 12 large eggs
  • 3 tbs water
  • salt and pepper to taste
  • 1 tbs olive oil
  • 1 lb chorizo casing removed, I just get it already out of the casing at the meat counter
  • 1 medium onion diced
  • 1 large red bell pepper cored and diced
  • 1 4-ounce can chopped green chiles
  • 1 tsp cumin
  • 1 15-ounce can black beans drained and rinsed
  • 16 tortillas
  • 2 cups cheddar or Mexican cheese shredded

Instructions

  1. Pre-heat the oven to 375 or whatever your tater tot package says. 

  2. Spread the tater tots on a baking sheet and bake them according to their package.

  3. Meanwhile, in a large bowl, crack all your eggs and add the water. Whisk eggs together. Season with salt and pepper to taste. 

  4. Heat a large saute pan over medium heat. Spray with olive oil spray. Add the eggs, scrambling by doing a figure eight motion with a spatula. Do not over cook the eggs. They will continue to cook when you remove them from the heat. 

  5. Remove them from the heat and set aside. 

  6. Heat a large saute pan over medium heat. Add the olive oil. 

  7. Next, add your onion and cook for about 4 minutes, stirring occasionally. 

  8. Add the bell pepper and cook for another 4-5 minutes. You want your onions to be translucent and soft. 

  9. Add the chorizo, beans, green chilies, and cumin. Break up the chorizo as it cooks with a fork or wooden spoon. Cook for about 4-5 minutes, until cooked all the way through. 

  10. To assemble the burritos, lay out a large sheet of saran wrap on your counter. Place 1 tortilla on it. Add one 1/4 cup of the scrambled egg mixture.

  11. Next, add 1/4 cup of the chorizo mixture. (The ratio of egg to chorizo is really up to you though)

  12. Then, add several tater tots. I like to tear mine in half. 

  13. Top with a large pinch of cheese (really as much as you like.)

  15. Wrap the plastic wrap over the burrito and place in the freezer. 

  16. Repeat with remaining tortillas. 

  17. These last up the 3 months in the freezer!

  18. To reheat, wrap a paper towel around it and place in the microwave for 1 minute. Flip the burrito and cook for another 30 seconds.
